Ingredients:

For the beef skewers:

  • 500g beef sirloin or ribeye, cut into 1-inch cubes

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp Shaoxing wine (or rice wine)

  • 1 tsp sugar

  • 1 tsp ground cumin

  • 1 tsp chili flakes (adjust to taste)

  • 2 garlic cloves, minced

  • 1 tbsp crushed Sichuan peppercorns (optional, for numbing kick)

  • Salt to taste

  • Skewers (soaked in water if wooden)

For the wrap:

  • Flatbreads or Chinese pancakes (store-bought or homemade)

  • Spicy chili paste or garlic chili sauce

  • Finely chopped garlic

  • Spring onions or scallions


Instructions:

  1. Marinate the Beef:
    In a large bowl, combine beef cubes with soy sauce, sesame oil, wine, sugar, garlic, cumin, chili flakes, and Sichuan pepper. Toss well, cover, and marinate for at least 1 hour (or overnight for best flavor).

  2. Skewer the Beef:
    Thread 4–5 beef cubes onto each skewer. Lightly sprinkle with extra cumin and chili flakes if you like it extra spicy.

  3. Grill:
    Preheat a grill, grill pan, or broiler. Cook skewers over medium-high heat, rotating occasionally, for about 8–10 minutes until charred and cooked through.

  4. Assemble the Wrap:
    Warm flatbread or pancakes slightly. Spread a bit of chili paste and sprinkle chopped garlic on one side. Add beef skewer meat (remove sticks), top with scallions or herbs of choice, and wrap it up!
