🌿 Ingredients

For the Lavender Cake (3 layers):

  • 2 1/2 cups (310g) cake flour

  • 2 1/2 tsp baking powder

  • 1/2 tsp salt

  • 3/4 cup (170g) unsalted butter, softened

  • 1 3/4 cups (350g) granulated sugar

  • 4 large egg whites

  • 1 tsp vanilla extract

  • 1 tsp culinary lavender extract (or 2 tsp dried culinary lavender, steeped in milk)

  • 1 cup (240ml) whole milk, room temp

  • Purple gel food coloring (varying shades for ombre effect)

For the Vanilla Buttercream:

  • 1 cup (230g) unsalted butter, softened

  • 4 cups (480g) powdered sugar, sifted

  • 1 tbsp vanilla extract

  • 3–4 tbsp heavy cream or milk

  • A drop of lavender or purple food coloring (optional)

For Decoration:

  • 4–6 lavender or vanilla macarons

  • Fresh or dried edible lavender blossoms

  • Edible lilac sugar flowers or piped buttercream flowers

  • White sugar pearls or edible glitter (optional)


🧁 Instructions

1. Bake the Cake Layers:

  • Preheat oven to 350°F (175°C). Grease and line three 6-inch or 8-inch round cake pans.

  • In a bowl, whisk together flour, baking powder, and salt.

  • In a large bowl, cream butter and sugar until light and fluffy (3–5 min).

  • Beat in egg whites one at a time. Add vanilla and lavender extract.

  • Alternate adding flour mixture and milk, starting and ending with flour.

  • Divide batter into 3 bowls. Tint each with increasing amounts of purple to achieve an ombre gradient.

  • Pour into pans and bake 22–26 mins. Let cool completely.

2. Make the Buttercream:

  • Beat butter until creamy (2–3 mins). Add vanilla.

  • Gradually mix in powdered sugar. Add cream until desired consistency.

  • Tint a portion of the buttercream light purple for the ombre effect.

3. Assemble the Cake:

  • Stack and fill layers with buttercream, placing the darkest cake layer at the bottom and the lightest on top.

  • Crumb coat and chill for 15 mins.

  • Frost the cake using light to dark purple buttercream from top to bottom for the ombre finish. Smooth with a bench scraper or spatula.

4. Decorate:

  • Place macarons on top.

  • Arrange lavender blossoms and edible flowers around the top and sides.

  • Add sugar pearls, piped dots, or glitter for a magical finish.
