🍫 Chocolate Fudge Cake with Ganache & Cocoa Cream

Ingredients

For the Cake Layers:

  • 200 g (1 1/2 cups) all-purpose flour

  • 50 g (1/2 cup) cocoa powder (unsweetened)

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 200 g (1 cup) granulated sugar

  • 2 large eggs (room temperature)

  • 120 ml (1/2 cup) vegetable oil

  • 240 ml (1 cup) buttermilk

  • 2 tsp vanilla extract

  • 120 ml (1/2 cup) hot coffee (enhances chocolate flavor)

For the Ganache Coating:

  • 300 g (10 oz) dark chocolate, finely chopped

  • 240 ml (1 cup) heavy cream

  • 2 tbsp unsalted butter

For the Cocoa Cream Topping:

  • 200 ml (3/4 cup) heavy cream (cold)

  • 2 tbsp powdered sugar

  • 1 tbsp cocoa powder


Instructions

Step 1 – Bake the Chocolate Cake

  1. Preheat oven to 175°C (350°F). Grease and line two 8-inch (20 cm) cake pans.

  2. In a bowl, sift together flour, cocoa, baking powder, baking soda, and salt.

  3. In another bowl, whisk eggs and sugar until fluffy. Add oil, buttermilk, and vanilla.

  4. Stir in dry ingredients, then pour in hot coffee. Mix gently until smooth.

  5. Divide batter evenly into pans and bake for 25–30 minutes, until a toothpick comes out clean. Cool completely.


Step 2 – Make the Ganache

  1. Heat cream until just simmering. Pour over chopped chocolate.

  2. Let sit for 2 minutes, then stir until smooth. Add butter and mix until glossy.

  3. Let ganache cool slightly until thick enough to spread.


Step 3 – Assemble the Cake

  1. Place one cake layer on a serving plate, spread some ganache in between.

  2. Stack with the second layer, then coat the entire cake with ganache for a smooth fudge finish.


Step 4 – Cocoa Cream Topping

  1. Whip cold cream, powdered sugar, and cocoa powder until stiff peaks form.

  2. Pipe small swirls on top of the cake.

  3. Garnish with a tiny green leaf for a minimal elegant touch (like in your photo).
