
🍫 Chocolate Heart Sandwich Cookies
Ingredients:
For the cookies:

1 cup (230 g) unsalted butter, softened

3/4 cup (150 g) granulated sugar
-
1 large egg
-
1 tsp vanilla extract
-
2 cups (250 g) all-purpose flour
-
1/2 cup (50 g) unsweetened cocoa powder
-
1/2 tsp baking powder
-
Pinch of salt
For the filling:
-
4 oz (115 g) dark chocolate (or semi-sweet)
-
1/3 cup (80 ml) heavy cream
-
1 tbsp butter
Instructions:
Step 1: Make the cookie dough
-
In a large bowl, cream together butter and sugar until light and fluffy.

Add the egg and vanilla extract, mixing well.
-
In another bowl, whisk together flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients into the butter mixture, mixing until dough forms.

Wrap dough in plastic wrap and refrigerate for at least 1 hour.
Step 2: Cut and bake

Preheat oven to 350°F (175°C).

Roll out chilled dough on a lightly floured surface to about 1/4 inch (6 mm) thickness.

Cut out round cookies using a cookie cutter. For half of them, cut out a small heart shape in the center.

Place cookies on a parchment-lined baking sheet.

Bake for 8–10 minutes, until firm but not overbaked. Let cool completely.
Step 3: Prepare the filling

Heat the cream in a small saucepan until just simmering.
-
Pour hot cream over chopped chocolate and butter. Stir until smooth and glossy.

Allow to cool slightly until it thickens to a spreadable consistency.
Step 4: Assemble the cookies

Spread or pipe chocolate filling on the flat side of the whole round cookies.

Top with a heart-cut cookie, pressing gently to sandwich together.

Let set until the filling firms up.
