🍒 Heart-Shaped Cherry Tarts

Ingredients

For the tart crust:

  • 1 ½ cups (190g) all-purpose flour

  • ½ cup (115g) unsalted butter, cold and cubed

  • ¼ cup (50g) granulated sugar

  • 1 large egg yolk

  • 2–3 tbsp ice water

  • Pinch of salt

For the filling:

  • 2 cups (300g) fresh or frozen cherries, pitted

  • ½ cup (100g) granulated sugar

  • 1 tbsp lemon juice

  • 2 tbsp cornstarch (mixed with 2 tbsp water to make a slurry)

  • ½ tsp vanilla extract

Optional for extra shine:

  • 2 tbsp cherry jam (heated and thinned with 1 tsp water for glaze)


Instructions

1. Make the crust:

  1. In a bowl, mix flour, sugar, and salt. Cut in the butter until the mixture looks crumbly.

  2. Add egg yolk and ice water, mixing until dough comes together.

  3. Form into a disk, wrap in plastic wrap, and chill for 30 minutes.

2. Prepare the filling:

  1. In a saucepan, combine cherries, sugar, and lemon juice. Cook over medium heat until juices release.

  2. Stir in the cornstarch slurry and cook until thickened, about 3–4 minutes.

  3. Remove from heat and add vanilla. Let cool.

3. Assemble the tarts:

  1. Roll out the chilled dough on a lightly floured surface. Cut into pieces large enough to fit heart-shaped tart molds.

  2. Press dough into molds, trimming excess. Prick the bottoms with a fork.

  3. Blind bake at 350°F (175°C) for 12–15 minutes until lightly golden.

  4. Fill each tart with cherry filling.

  5. If desired, brush the tops with cherry jam glaze for extra shine.

4. Serve:

  • Let the tarts cool before removing from molds.

  • Garnish with a fresh cherry on top. 🍒
