A stunning twist on the classic red velvet — soft, moist, and vibrantly blue with creamy frosting and fresh blueberries on top!

Cake Layers:

1–2 tsp royal blue gel food coloring (adjust to your shade preference)
Frosting Options:
Classic Cream Cheese Frosting

8 oz cream cheese, softened

½ cup unsalted butter, softened

3½ cups powdered sugar
-
1 tsp vanilla extract
Optional: Add a drop of blue food coloring to the frosting for a coordinated look

1. Make the Cake:

Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.

In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

In another bowl, beat together sugar, oil, eggs, vanilla extract, and gel food coloring.

Stir in buttermilk and vinegar.

Gradually add dry ingredients to wet, mixing until the batter is smooth and evenly colored.

Divide evenly between pans and bake for 25–28 minutes, or until a toothpick comes out clean.

Let cool completely.
2. Make the Frosting:

Beat cream cheese and butter until smooth and fluffy.

Gradually add powdered sugar and vanilla.

Beat until creamy. Add blue coloring if desired for a pop of matching color.
3. Assemble the Cake:

Layer cakes with frosting between each layer.

Frost the top and sides smoothly.

Decorate with frosting swirls or rosettes.

Top with fresh blueberries and optional glitter for a magical finish.

Chill for 20–30 minutes before slicing to get neat layers.
