Creamy Garlic Parmesan Tortellini with Sausage and Broccoli

Last night, I made this Creamy Garlic Parmesan Tortellini with Sausage and Broccoli for dinner, and it turned out amazing. It’s become an instant favorite and is definitely going to be on regular rotation in my kitchen!

Ingredients:

  • 12 oz cheese tortellini – fresh or refrigerated
  • 1 lb Italian sausage (mild or spicy), casings removed and crumbled
  • 2 cups broccoli florets
  • 2 tbsp butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 3 garlic cloves, minced
  • Salt and pepper, to taste
  • Optional: Red pepper flakes for a little extra kick and chopped fresh parsley for garnish

Instructions:

  1. Cook the Tortellini:
    Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside, reserving about 1/4 cup of the pasta water.

  2. Brown the Sausage:
    In a large skillet over medium heat, add the crumbled Italian sausage. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving a bit of the rendered fat for flavor.

  3. Sauté the Garlic & Broccoli:
    In the same skillet, add 2 tablespoons of butter. Once melted, stir in the minced garlic and sauté for about 30 seconds until fragrant. Add the broccoli florets and sauté for 3-4 minutes until they begin to soften but remain crisp.

  4. Combine & Create the Sauce:
    Return the cooked sausage to the skillet. Pour in the chicken broth and bring to a simmer. Stir in the grated Parmesan cheese until it melts into a smooth, creamy sauce. If you prefer a thinner sauce, add a splash of the reserved pasta water.

  5. Mix in Tortellini:
    Add the cooked tortellini to the skillet and gently toss to coat in the creamy sauce. Season with salt, pepper, and red pepper flakes (if using). Cook for an additional 1-2 minutes to let all the flavors meld together.

  6. Garnish & Serve:
    Remove from heat and transfer to serving plates. Garnish with extra Parmesan and chopped fresh parsley. Serve immediately and enjoy your comforting, flavor-packed meal!
