Yummy Grilled Shrimp Bowl with Avocado Corn Salsa & Creamy Sauce

Ingredients

For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Salt and black pepper, to taste

For the Avocado Corn Salsa:

  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper, to taste

For the Creamy Sauce:

  • ½ cup Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon honey (optional, for a touch of sweetness)
  • 1 small garlic clove, minced (optional)
  • Salt and black pepper, to taste

For Assembly (Optional):

  • Cooked quinoa, rice, or mixed greens for a base

Directions

  1. Marinate & Grill the Shrimp:

    • In a bowl, combine olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, and black pepper.
    • Toss the shrimp in the spice mixture until evenly coated. Let it marinate for about 10–15 minutes.

    • In a separate bowl, combine the corn kernels, diced avocado, and red bell pepper (or red onion).
    • Squeeze in the lime juice, add chopped cilantro, and season with salt and pepper. Gently toss to mix, adjusting seasoning as needed.
  3. Make the Creamy Sauce:

    • In a small bowl, whisk together Greek yogurt (or sour cream), lime juice, honey (if using), and minced garlic.
    • Season with salt and black pepper. If you prefer a thinner consistency, add a splash of water and stir until smooth.
  4. Assemble Your Bowl:

    • Start with a base of cooked quinoa, rice, or a bed of mixed greens.
